Prep zucchini: Slice zucchini into thin rounds. Lay them on paper towels and sprinkle lightly with salt. Let sit for 10–15 minutes to draw out moisture, then pat dry.

Preheat oven to 425°F (220°C), or preheat air fryer to 375°F (190°C).

Toss with flavor: In a bowl, toss zucchini slices with olive oil, garlic powder, and optional herbs. Add Parmesan and breadcrumbs if using.

Arrange slices in a single layer on a parchment-lined baking sheet or air fryer basket.
