1 lb ground beef

1 cup chopped onions

1 cup chopped carrots

1 cup chopped celery

3 cups peeled and diced potatoes

4 cups chicken broth

1 tsp dried basil

1 tsp dried parsley

1/4 cup all-purpose flour

2 cups milk

2 cups shredded cheddar cheese

1/2 tsp salt

1/4 tsp black pepper


Instructions

In a skillet, brown the ground beef over medium heat, then drain the fat.

Transfer the cooked beef to your crock pot.

Add the onions, carrots, celery, potatoes, chicken broth, basil, and parsley into the crock pot.

Cover and cook on low for 6-8 hours until the vegetables are tender.

In a small bowl, whisk the flour and milk together until smooth.

Pour the milk mixture into the crock pot and stir to combine.

Cover and cook on high for an additional 30 minutes, until the soup thickens.

Stir in the shredded cheddar cheese, salt, and pepper, and cook for 10 more minutes until the cheese is melted.
