For the Cookies:

½ cup unsalted butter, softened

¾ cup granulated sugar

1 large egg

1 tablespoon lemon zest

2 tablespoons fresh lemon juice

1 teaspoon vanilla extract

1 ½ cups all-purpose flour

½ teaspoon baking soda

½ teaspoon baking powder

¼ teaspoon salt

1 tablespoon poppy seeds

For the Lemon Glaze:

1 cup powdered sugar

2 tablespoons fresh lemon juice

1 teaspoon lemon zest

12 tablespoons milk (adjust for consistency)


Instructions

Prepare the Cookie Dough

Preheat oven to 175°C (350°F). Line a baking sheet with parchment paper.

In a large bowl, cream butter and sugar until light and fluffy.

Mix in the egg, lemon zest, lemon juice, and vanilla extract until well combined.

In a separate bowl, whisk together flour, baking soda, baking powder, salt, and poppy seeds.

Gradually add dry ingredients to the wet mixture, stirring until just combined.

 

Bake the Cookies

Scoop dough into 2-tablespoon-sized balls and place on the prepared baking sheet.

Flatten slightly with your palm.

Bake for 10–12 minutes, or until the edges are lightly golden.

Let cookies cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.

 

Make the Lemon Glaze

In a small bowl, whisk powdered sugar, lemon juice, lemon zest, and milk until smooth.

Drizzle or spread over cooled cookies.

 

Serve

Let the glaze set for 10 minutes before serving. Enjoy!
