1 large cucumber, thinly sliced lengthwise
1 ripe avocado, mashed
1 tablespoon lemon or lime juice
Salt and black pepper, to taste
2 tablespoons chopped fresh cilantro or dill
Optional: red pepper flakes or sesame seeds for garnish
Instructions

In a bowl, mash the avocado with lemon juice, salt, pepper, and herbs.

Lay out cucumber slices on a flat surface. Pat dry with a paper towel if needed.

Spread a small amount of avocado mixture on one end of each cucumber slice.

Roll up tightly and place seam-side down.

Garnish with red pepper flakes or sesame seeds if desired. Serve chilled.
