For the cookies:
- 1 cup unsalted butter, softened
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- ¼ teaspoon salt
For the caramel layer:
- 1 cup soft caramel candies, unwrapped
- 2 tablespoons heavy cream
For the chocolate topping:
- 1 ½ cups milk chocolate chips
- 1 teaspoon coconut oil or vegetable oil
Instructions
- Prepare the cookies – Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Make the dough – Cream the butter and sugar together until light and fluffy. Add vanilla, then mix in flour and salt until a dough forms.
- Shape and bake – Roll the dough into small balls and flatten slightly. Place on the baking sheet and bake for 12–15 minutes or until lightly golden. Let cool completely.
- Make the caramel – Melt caramel candies with heavy cream in a microwave-safe bowl in 30-second intervals, stirring until smooth. Spoon a little caramel onto each cookie and let set.
- Add the chocolate – Melt chocolate chips with coconut oil in the microwave in 30-second bursts, stirring until smooth. Spread or drizzle over the caramel layer.
- Set and serve – Let the chocolate set at room temperature or in the fridge for faster results.
