Delicious and Nutritious Sweet Potato Pancakes Recipe

1 cup mashed cooked sweet potato (about 1 medium)
2 large eggs
1/2 cup milk (dairy or non-dairy)
1 teaspoon vanilla extract
1 tablespoon maple syrup (optional, for sweetness)
3/4 cup all-purpose flour (or oat flour for gluten-free)
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
Butter or oil, for cooking


Instructions

  • Prepare Sweet Potato:

    • Peel, chop, and boil or roast sweet potato until tender. Mash well and let cool slightly.

  • Mix Wet Ingredients:

    • In a medium bowl, whisk together mashed sweet potato, eggs, milk, vanilla, and maple syrup (if using).

  • Add Dry Ingredients:

    • Stir in flour, baking powder, cinnamon, nutmeg, and salt. Mix until just combined; batter will be thick.

  • Cook Pancakes:

    • Heat a skillet or griddle over medium heat and lightly grease with butter or oil.

    • Scoop 1/4 cup batter per pancake onto the skillet. Cook 2–3 minutes per side, or until golden and cooked through.

 

  • Serve:

    • Serve warm with maple syrup, chopped nuts, or a dollop of yogurt or nut butter.
