Ingredients
4 boneless, skinless chicken breasts
1 tbsp olive oil
1 (10.5 oz) can cream of chicken soup
1 (8 oz) package cream cheese, softened
1/2 cup chicken broth
1 packet dry Italian salad dressing mix
2 cups cooked rice (white or brown)
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet, heat olive oil over medium heat. Brown the chicken breasts for about 3-4 minutes per side. Transfer to a baking dish.
In a medium bowl, mix together cream of chicken soup, softened cream cheese, chicken broth, and the dry Italian salad dressing mix until smooth.
Pour the sauce over the browned chicken in the baking dish, covering the chicken evenly.
Cover the dish with foil and bake for 30-35 minutes, until the chicken is cooked through.
Serve the chicken and sauce over cooked rice. Garnish with fresh parsley if desired.
