Ingredients
4 boneless, skinless chicken breasts or thighs
1/2 cup apricot preserves
2 tablespoons Dijon mustard
1 tablespoon soy sauce
1 tablespoon apple cider vinegar
2 cloves garlic, minced
Salt and black pepper, to taste
Fresh thyme or green onions, for garnish (optional)
Instructions

Preheat oven to 375°F (190°C). Lightly grease a baking dish.

In a bowl, whisk together apricot preserves, Dijon mustard, soy sauce, vinegar, garlic, salt, and pepper.

Place chicken in the baking dish and spoon the glaze evenly over the top.

Bake for 25–30 minutes, or until chicken is cooked through and glaze is bubbling.

Spoon extra sauce from the pan over the chicken before serving. Garnish if desired.
