2 large chicken breasts (cubed)

4 medium potatoes (diced)

1 cup shredded cheddar cheese

½ cup mozzarella cheese

1 cup heavy cream or milk

½ cup sour cream

3 cloves garlic (minced)

1 tsp salt

½ tsp black pepper

1 tsp paprika

½ tsp dried oregano

½ tsp onion powder

2 tbsp olive oil

4 slices bacon (cooked and crumbled, optional)

2 tbsp fresh parsley (chopped)
Instructions

Preheat the Oven:

Set oven to 375°F (190°C). Grease a baking dish with olive oil or cooking spray.

Prepare the Ingredients:

In a large bowl, toss diced potatoes with olive oil, salt, pepper, paprika, oregano, and onion powder.

In a separate bowl, season chicken cubes with a pinch of salt, pepper, and garlic.

Assemble the Casserole:

Spread half of the potatoes in the baking dish.

Layer the cubed chicken on top.

Mix heavy cream, sour cream, and minced garlic, then pour over the chicken and potatoes.

Bake:

Cover with foil and bake for 35 minutes.

Remove foil, sprinkle cheddar and mozzarella cheese over the top, and bake uncovered for another 10-15 minutes until cheese is golden and bubbly.

Garnish with crumbled bacon and fresh parsley.
