Delicious Chicken and Potato Casserole Recipe: A Comforting Meal for Any Occasion

  • 2 large chicken breasts (cubed)

  • 4 medium potatoes (diced)

  • 1 cup shredded cheddar cheese

  • ½ cup mozzarella cheese

  • 1 cup heavy cream or milk

  • ½ cup sour cream

  • 3 cloves garlic (minced)

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp paprika

  • ½ tsp dried oregano

  • ½ tsp onion powder

  • 2 tbsp olive oil

  • 4 slices bacon (cooked and crumbled, optional)

  • 2 tbsp fresh parsley (chopped)


Instructions

  • Preheat the Oven:

    • Set oven to 375°F (190°C). Grease a baking dish with olive oil or cooking spray.

  • Prepare the Ingredients:

    • In a large bowl, toss diced potatoes with olive oil, salt, pepper, paprika, oregano, and onion powder.

    • In a separate bowl, season chicken cubes with a pinch of salt, pepper, and garlic.

  • Assemble the Casserole:

    • Spread half of the potatoes in the baking dish.

    • Layer the cubed chicken on top.

    • Mix heavy cream, sour cream, and minced garlic, then pour over the chicken and potatoes.

  • Bake:

    • Cover with foil and bake for 35 minutes.

    • Remove foil, sprinkle cheddar and mozzarella cheese over the top, and bake uncovered for another 10-15 minutes until cheese is golden and bubbly.

 

  • Finish & Serve:

    • Garnish with crumbled bacon and fresh parsley.

    • Let sit for 5 minutes before serving.
