Ingredients
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 zucchini, sliced
1 yellow squash, sliced
1 red onion, cut into wedges
8 oz mushrooms, halved
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1 tablespoon honey
1 teaspoon garlic powder
Salt and black pepper, to taste
Fresh basil or parsley, for garnish (optional)
Instructions

In a small bowl, whisk together olive oil, balsamic vinegar, honey, garlic powder, salt, and pepper.

Place all vegetables in a large bowl or zip-top bag. Pour marinade over veggies and toss to coat. Let sit for 15–30 minutes.

Preheat grill or grill pan over medium-high heat.

Grill vegetables in batches for 3–5 minutes per side, until tender and nicely charred.

Transfer to a serving platter and garnish with fresh herbs if desired.
