Delicious Loaded Baked Sweet Potato with BBQ Chicken – Perfect for a Flavorful Meal

  • 2 large sweet potatoes

  • 2 cups shredded cooked chicken (rotisserie or baked)

  • ½ cup BBQ sauce (your favorite brand)

  • ½ cup shredded cheddar cheese

  • ¼ cup sour cream or Greek yogurt

  • 2 green onions, sliced

  • ¼ cup crispy bacon bits (optional)

  • ½ teaspoon garlic powder

  • ½ teaspoon smoked paprika

  • Salt and pepper to taste


Instructions

  • Bake the Sweet Potatoes:

    • Preheat your oven to 400°F (200°C).

    • Scrub the sweet potatoes, pierce them with a fork, and place them on a baking sheet.

    • Bake for 45-50 minutes, or until they are tender when pierced with a knife.

  • Prepare the BBQ Chicken:

    • In a skillet over medium heat, warm the shredded chicken.

    • Add BBQ sauce, garlic powder, smoked paprika, salt, and pepper. Stir until well coated.

    • Simmer for 3-5 minutes, then remove from heat.

  • Assemble the Loaded Potatoes:

    • Slice open the baked sweet potatoes and fluff the insides with a fork.

    • Fill each potato with the BBQ chicken mixture.

    • Sprinkle with cheddar cheese and let it melt.

 

  • Add Toppings & Serve:

    • Top with sour cream or Greek yogurt, green onions, and bacon bits (if using).
