Delicious S’mores Cookie Bars Recipe: Gooey, Chocolatey & Easy to Make

  • 1 ½ cups graham cracker crumbs

  • 1 ¼ cups all-purpose flour

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • ½ cup unsalted butter, softened

  • ½ cup brown sugar

  • ½ cup granulated sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1 cup chocolate chips or chopped chocolate bars

  • 1 cup mini marshmallows

  • 2 Hershey’s chocolate bars, broken into pieces


Instructions

  • Preheat the Oven:

    • Set your oven to 350°F (175°C).

    • Line an 8×8 or 9×9-inch baking pan with parchment paper.

  • Prepare the Dough:

    • In a bowl, whisk together graham cracker crumbs, flour, baking soda, and salt.

    • In another large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy.

    • Mix in the egg and vanilla extract.

  • Combine the Ingredients:

    • Gradually add the dry ingredients to the wet ingredients and mix until just combined.

    • Fold in chocolate chips.

  • Assemble the Bars:

    • Press 2/3 of the dough evenly into the prepared pan.

    • Sprinkle mini marshmallows over the dough.

    • Arrange Hershey’s chocolate pieces on top.

    • Crumble the remaining dough over the marshmallows and chocolate, leaving some areas exposed.

 

  • Bake & Cool:

    • Bake for 20-25 minutes, until golden brown.

    • Let cool for at least 30 minutes before slicing.
