Ingredients

2 cups cooked shredded chicken

1 ½ cups cooked rice or quinoa

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1 cup shredded mozzarella or feta cheese

1 cup tzatziki sauce

1 tablespoon olive oil

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh parsley or dill, for garnish
Instructions
Preheat Oven:
Preheat oven to 375°F (190°C).
Combine Ingredients:
In a large mixing bowl, combine shredded chicken, cooked rice or quinoa, cherry tomatoes, cucumber, red onion, olive oil, oregano, salt, and pepper. Mix well.
Assemble Casserole:
Transfer mixture to a greased baking dish. Spread tzatziki sauce evenly over the top, then sprinkle with shredded cheese.
Bake:
Bake uncovered for 20–25 minutes, or until cheese is melted and bubbly.
Garnish and Serve:
Remove from oven and let cool slightly. Garnish with fresh parsley or dill before serving.
