For the Filling:

  • 8 oz cream cheese, softened

  • ½ cup powdered sugar

  • 1 teaspoon vanilla extract

  • ½ cup whipped topping (like Cool Whip)

For the Fruit Mix:

  • ½ cup diced strawberries

  • ½ cup diced kiwi

  • ½ cup blueberries

  • ½ cup diced pineapple

  • ½ cup green or red grapes, halved

For the Roll Ups:

  • 56 large flour tortillas

  • Powdered sugar, for dusting (optional)


Instructions

Prepare the Cheesecake Filling:
In a medium bowl, beat softened cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in whipped topping until light and fluffy.

Chop the Fruit:
Dice and prep all fruits into small, even pieces. Pat dry with paper towels to remove excess moisture.

Assemble the Roll Ups:
Spread a generous layer of cheesecake filling over each tortilla, leaving a small border around the edges. Evenly sprinkle chopped fruit over the top.

Roll and Chill:
Tightly roll each tortilla and place seam-side down on a plate. Chill in the refrigerator for at least 30 minutes to set.

 

Slice and Serve:
Slice into 1 to 2-inch pinwheels. Optionally dust with powdered sugar before serving.
