Try these easy chicken fajitas! Juicy chicken, sautéed veggies, and warm tortillas make a quick and delicious weeknight meal. Ready in just 20 minutes
Ingredients
1 lb chicken breast, thinly sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow onion, sliced
2 tbsp olive oil
1 tbsp fajita seasoning
8 small flour tortillas
1/2 cup sour cream (optional)
1/2 cup shredded cheddar cheese (optional)
Lime wedges (for serving)
Instructions
In a large skillet, heat 1 tbsp of olive oil over medium heat. Add the sliced chicken and sprinkle with fajita seasoning. Cook for 5-7 minutes until the chicken is cooked through. Remove from the skillet and set aside.
In the same skillet, add the remaining 1 tbsp of olive oil. Sauté the bell peppers and onion for about 5 minutes, until tender but still crisp.
Return the chicken to the skillet and stir to combine with the vegetables. Cook for another 2 minutes until heated through.
Warm the flour tortillas in the microwave or on a stovetop.
Serve the chicken and veggies on the tortillas. Add sour cream, shredded cheese, and a squeeze of lime juice if desired. Enjoy!
