Ingredients
For the Hash:
2 tbsp olive oil or butter
1 small onion (diced)
2 garlic cloves (minced)
3 cups cooked potatoes (diced, peeled or unpeeled)
2 cups cooked corned beef (chopped)
½ tsp paprika
½ tsp garlic powder
Salt & pepper to taste
2 tbsp fresh parsley (chopped)
Optional Toppings:
4 large eggs (fried or poached)
Hot sauce
Ketchup
Instructions
Prepare the Hash:
Heat olive oil or butter in a large skillet over medium heat.
Add diced onions and garlic, cooking until softened (3-4 minutes).
Stir in diced potatoes and cook until lightly golden and crisp (8-10 minutes), stirring occasionally.
Add corned beef, paprika, garlic powder, salt, and pepper. Cook for 5-7 minutes until everything is heated through and crispy on the edges.
Serve:
5. Garnish with fresh parsley.
6. Top with fried or poached eggs if desired.
7. Serve hot with hot sauce or ketchup on the side.
