Ingredients
3 cups cooked pasta (rotini or penne)
1 cup cherry tomatoes, halved
1/2 cup black olives, sliced
1/2 cup mozzarella cheese, cubed
1/4 cup red onion, thinly sliced
1/2 cup cucumber, diced
1/4 cup bell pepper, chopped
1/4 cup salami or pepperoni, chopped (optional)
1/3 cup Italian dressing
1 tbsp fresh parsley, chopped
Salt and pepper to taste
Instructions
In a large bowl, combine cooked pasta, cherry tomatoes, black olives, mozzarella, red onion, cucumber, bell pepper, and salami (if using).
Pour the Italian dressing over the salad and toss well to coat.
Season with salt and pepper to taste.
Sprinkle with fresh parsley and mix again.
Chill in the refrigerator for at least 30 minutes before serving.
