Ingredients
For the peach filling:

6–7 ripe peaches, peeled and sliced (or use 6 cups frozen/thawed or canned/drained peaches)

¼ cup granulated sugar

1 tbsp lemon juice

1 tbsp cornstarch or flour

1 tsp vanilla extract

½ tsp cinnamon (optional)
For the crisp topping:

¾ cup old-fashioned oats
-
½ cup all-purpose flour
-
½ cup brown sugar
-
½ tsp cinnamon
-
¼ tsp salt
-
½ cup (1 stick) unsalted butter, cold and cubed
Instructions
1. Preheat the Oven

Set your oven to 350°F (175°C).
2. Prepare the Filling

In a large bowl, mix the peach slices with sugar, lemon juice, cornstarch, vanilla, and cinnamon.

Pour into a greased 8×8-inch baking dish or similar size.
3. Make the Topping

In another bowl, combine oats, flour, brown sugar, cinnamon, and salt.

Cut in the cold butter using a pastry cutter or your fingers until it looks crumbly.
4. Assemble & Bake

Sprinkle the crisp topping evenly over the peaches.

Bake for 35–40 minutes, or until the top is golden and the filling is bubbly.
5. Cool & Serve

Let cool for about 10 minutes before serving.

Top with vanilla ice cream or whipped cream for extra indulgence!
