  • 1 lb smoked sausage, sliced
  • 1.5 lbs baby potatoes, halved
  • 1 lb fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme (optional)
  • ½ teaspoon red pepper flakes (optional, for heat)

 

  • ¼ cup grated Parmesan cheese (optional)

Instructions

  • Preheat oven to 400°F (200°C).
  • In a large bowl, toss the potatoes with olive oil, garlic, onion powder, paprika, salt, pepper, and thyme.
  • Spread the potatoes on a baking sheet and roast for 20 minutes, stirring halfway.
  • Add the sliced sausage and green beans to the pan, mix well, and continue roasting for 15-20 minutes, until potatoes are fork-tender and sausage is browned.
  • Sprinkle with Parmesan cheese (if using) and toss to combine.
