- 1 lb smoked sausage, sliced
- 1.5 lbs baby potatoes, halved
- 1 lb fresh green beans, trimmed
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon dried thyme (optional)
- ½ teaspoon red pepper flakes (optional, for heat)
- ¼ cup grated Parmesan cheese (optional)
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss the potatoes with olive oil, garlic, onion powder, paprika, salt, pepper, and thyme.
- Spread the potatoes on a baking sheet and roast for 20 minutes, stirring halfway.
- Add the sliced sausage and green beans to the pan, mix well, and continue roasting for 15-20 minutes, until potatoes are fork-tender and sausage is browned.
- Sprinkle with Parmesan cheese (if using) and toss to combine.
- Serve hot and enjoy!
