1 cup (2 sticks) unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 ½ cups all-purpose flour

½ teaspoon baking powder

¼ teaspoon salt


Instructions

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, beat butter and sugar together until light and fluffy.
  • Add egg and vanilla extract, mixing until combined.
  • In a separate bowl, whisk together flour, baking powder, and salt.
  • Gradually add dry ingredients to the wet mixture, stirring until a dough forms.
  • Roll dough into 1-inch balls and place on the baking sheet about 2 inches apart. Flatten slightly with a fork or the bottom of a glass.
  • Bake for 8–10 minutes, or until edges are lightly golden.
  • Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
