1 lb ground beef or ground turkey

1 packet taco seasoning

2/3 cup water

2 cups cooked white or brown rice

1 cup canned black beans, drained & rinsed

1 cup corn (fresh, canned, or frozen)

1 cup shredded cheddar or Mexican blend cheese

1 cup salsa or pico de gallo

1 avocado, diced

1/2 cup sour cream or Greek yogurt

Fresh cilantro, for garnish (optional)

Lime wedges, for serving (optional)
Instructions

In a skillet over medium heat, brown ground beef until fully cooked. Drain grease.

Stir in taco seasoning and water. Simmer for 5 minutes until thickened.

Warm black beans and corn in the microwave or on the stovetop.

Assemble bowls: start with a bed of rice, then layer taco meat, beans, corn, cheese, salsa, avocado, and sour cream.

Garnish with cilantro and a squeeze of lime if desired.
