Instructions

Prepare Dough:
In a saucepan, combine water, sugar, salt, and vegetable oil. Bring to a boil over medium heat. Remove from heat and stir in flour until mixture forms a ball. -
Heat Oil:
Heat oil in a deep fryer or large, deep skillet to 375°F (190°C). -
Pipe Churros:
Transfer dough to a piping bag fitted with a large star tip. Pipe 4-inch strips into the hot oil, cutting dough with scissors. -
Fry:
Fry churros in batches until golden brown and crispy, about 2–3 minutes per side. Drain on paper towels. -
Coat Churros:
Mix sugar and cocoa powder in a shallow bowl. Roll warm churros in the mixture until coated evenly. -
Make Chocolate Sauce:
Heat heavy cream until simmering, then pour over chopped chocolate. Let sit 1 minute, then stir until smooth. -
Serve:
Serve churros warm with chocolate dipping sauce.
