Fried Squash with Herb Dip: A Crispy Southern Delight You Can’t Resist

Ingredients (Fried Squash):

  • 2 medium yellow squash or zucchini, sliced into ¼” rounds

  • 1 cup buttermilk

  • 1 cup cornmeal or breadcrumbs

  • ½ cup all-purpose flour

  • Salt & pepper to taste

  • Oil for frying

Ingredients (Herb Dip):

  • ½ cup sour cream or Greek yogurt

  • 2 tbsp mayo

  • 1 tsp lemon juice

  • 1 tbsp chopped fresh herbs (like dill, parsley, or chives)

  • Salt & garlic powder to taste


Instructions

  1. Soak squash slices in buttermilk for 10–15 minutes.

  2. In a bowl, mix cornmeal, flour, salt, and pepper.

  3. Dredge squash in the dry mix and fry in hot oil until golden (about 2–3 mins per side).

  4. Drain on paper towels.

  5. Mix all dip ingredients in a bowl and chill.
