1½ lbs sirloin steak (or ribeye), cut into bite-sized pieces

1 lb baby potatoes, halved or quartered

3 tbsp olive oil

4 tbsp unsalted butter

5 cloves garlic, minced

1 tsp fresh thyme (or ½ tsp dried)

1 tsp fresh rosemary (or ½ tsp dried)

Salt and black pepper, to taste

Chopped fresh parsley (for garnish)
Instructions

Cook the Potatoes:

In a large skillet, heat 2 tbsp olive oil over medium heat.

Add the baby potatoes, season with salt and pepper, and cook for 10-12 minutes, stirring occasionally, until golden and fork-tender.

Remove the potatoes from the skillet and set aside.

Sear the Steak:

Season the steak pieces generously with salt and black pepper.

In the same skillet, add 1 tbsp olive oil and sear the steak over high heat for 2-3 minutes per side, until browned and cooked to your liking.

Remove steak from skillet and set aside.

Make the Garlic Butter:

Reduce the heat to medium-low.

Add butter to the skillet along with the minced garlic, thyme, and rosemary.

Sauté for 1-2 minutes until fragrant.

Combine and Finish:

Return the steak and potatoes to the skillet.

Toss everything in the garlic butter, coating evenly.

Cook for another 2 minutes, allowing the flavors to meld.
