  • Author: Hannah

Ingredients

Scale
  • lbs sirloin steak (or ribeye), cut into bite-sized pieces

  • 1 lb baby potatoes, halved or quartered

  • 3 tbsp olive oil

  • 4 tbsp unsalted butter

  • 5 cloves garlic, minced

  • 1 tsp fresh thyme (or ½ tsp dried)

  • 1 tsp fresh rosemary (or ½ tsp dried)

  • Salt and black pepper, to taste

  • Chopped fresh parsley (for garnish)

Instructions

  • Cook the Potatoes:

    • In a large skillet, heat 2 tbsp olive oil over medium heat.

    • Add the baby potatoes, season with salt and pepper, and cook for 10-12 minutes, stirring occasionally, until golden and fork-tender.

    • Remove the potatoes from the skillet and set aside.

  • Sear the Steak:

    • Season the steak pieces generously with salt and black pepper.

    • In the same skillet, add 1 tbsp olive oil and sear the steak over high heat for 2-3 minutes per side, until browned and cooked to your liking.

    • Remove steak from skillet and set aside.

  • Make the Garlic Butter:

    • Reduce the heat to medium-low.

    • Add butter to the skillet along with the minced garlic, thyme, and rosemary.

    • Sauté for 1-2 minutes until fragrant.

  • Combine and Finish:

    • Return the steak and potatoes to the skillet.

    • Toss everything in the garlic butter, coating evenly.

    • Cook for another 2 minutes, allowing the flavors to meld.

  • Serve:

    • Garnish with chopped parsley and serve hot.
