Ingredients
For the Steak Bites:

1 ½ lbs sirloin steak, cut into 1-inch cubes

1 tsp salt

½ tsp black pepper

½ tsp smoked paprika

½ tsp garlic powder

1 tbsp olive oil

3 tbsp unsalted butter

4 cloves garlic, minced

1 tbsp fresh parsley, chopped
For the Potatoes:

1 ½ lbs baby potatoes, halved

2 tbsp olive oil
-
1 tsp salt
-
½ tsp black pepper
-
½ tsp garlic powder
-
½ tsp smoked paprika

1 tbsp unsalted butter
Instructions

Prepare and Cook the Potatoes:

Heat 2 tbsp olive oil in a large skillet over medium-high heat.

Add the halved potatoes, cut-side down, and season with salt, black pepper, garlic powder, and smoked paprika.

Cook for 8-10 minutes, stirring occasionally, until golden brown and fork-tender.

Stir in 1 tbsp butter, let it melt, then transfer the potatoes to a plate and keep warm.

Cook the Steak Bites:

While the potatoes cook, season the steak cubes with salt, black pepper, smoked paprika, and garlic powder.

In the same skillet, heat 1 tbsp olive oil over high heat.

Add the steak bites in a single layer (cook in batches if needed) and sear for 2-3 minutes per side until browned and cooked to your desired doneness.

Reduce heat to medium-low, add 3 tbsp butter and minced garlic, and stir for 30 seconds until fragrant.

Sprinkle with fresh parsley and stir everything together.

Combine & Serve:

Add the cooked potatoes back to the skillet and toss with the steak bites to coat everything in the garlic butter.

Serve immediately, garnished with extra parsley if desired.
