  • Author: Hannah

Ingredients

Scale

For the Steak Bites:

  • 1 ½ lbs sirloin steak, cut into 1-inch cubes

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp smoked paprika

  • ½ tsp garlic powder

  • 1 tbsp olive oil

  • 3 tbsp unsalted butter

  • 4 cloves garlic, minced

  • 1 tbsp fresh parsley, chopped

For the Potatoes:

  • 1 ½ lbs baby potatoes, halved

  • 2 tbsp olive oil

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp garlic powder

  • ½ tsp smoked paprika

  • 1 tbsp unsalted butter

Instructions

  • Prepare and Cook the Potatoes:

    • Heat 2 tbsp olive oil in a large skillet over medium-high heat.

    • Add the halved potatoes, cut-side down, and season with salt, black pepper, garlic powder, and smoked paprika.

    • Cook for 8-10 minutes, stirring occasionally, until golden brown and fork-tender.

    • Stir in 1 tbsp butter, let it melt, then transfer the potatoes to a plate and keep warm.

  • Cook the Steak Bites:

    • While the potatoes cook, season the steak cubes with salt, black pepper, smoked paprika, and garlic powder.

    • In the same skillet, heat 1 tbsp olive oil over high heat.

    • Add the steak bites in a single layer (cook in batches if needed) and sear for 2-3 minutes per side until browned and cooked to your desired doneness.

    • Reduce heat to medium-low, add 3 tbsp butter and minced garlic, and stir for 30 seconds until fragrant.

    • Sprinkle with fresh parsley and stir everything together.

  • Combine & Serve:

    • Add the cooked potatoes back to the skillet and toss with the steak bites to coat everything in the garlic butter.

    • Serve immediately, garnished with extra parsley if desired.
