4 boneless, skinless chicken breasts
1 lb baby potatoes, halved or quartered
3 tablespoons olive oil, divided
4 cloves garlic, minced
1/2 cup grated Parmesan cheese
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Prepare the Potatoes: Place the halved or quartered potatoes on the prepared baking sheet. Drizzle with 1 tablespoon of olive oil, then sprinkle with salt, pepper, and half of the garlic powder. Toss to coat the potatoes evenly.

Season the Chicken: In a small bowl, combine the remaining olive oil, minced garlic, Parmesan cheese, oregano, thyme, garlic powder, onion powder, salt, and pepper. Rub this mixture all over the chicken breasts.

Arrange on the Baking Sheet: Place the seasoned chicken breasts on the baking sheet with the potatoes.

Bake: Bake for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F or 75°C) and the potatoes are tender and golden brown.
