Garlic Parmesan Chicken and Potatoes: A Delicious One-Pan Meal

4 boneless, skinless chicken breasts
1 lb baby potatoes, halved or quartered
3 tablespoons olive oil, divided
4 cloves garlic, minced
1/2 cup grated Parmesan cheese
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)


Instructions

  • Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

  • Prepare the Potatoes: Place the halved or quartered potatoes on the prepared baking sheet. Drizzle with 1 tablespoon of olive oil, then sprinkle with salt, pepper, and half of the garlic powder. Toss to coat the potatoes evenly.

  • Season the Chicken: In a small bowl, combine the remaining olive oil, minced garlic, Parmesan cheese, oregano, thyme, garlic powder, onion powder, salt, and pepper. Rub this mixture all over the chicken breasts.

  • Arrange on the Baking Sheet: Place the seasoned chicken breasts on the baking sheet with the potatoes.

  • Bake: Bake for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F or 75°C) and the potatoes are tender and golden brown.

 

  • Serve: Remove from the oven and let it rest for a few minutes before serving. Garnish with fresh parsley for a burst of color and flavor.
