- 2 boneless, skinless chicken breasts (cut into 1-inch cubes)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- ½ cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley (for garnish)
- Wooden or metal skewers
For serving (optional):
- Lemon wedges
- Garlic butter for dipping
Instructions
- Prepare the skewers – If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Marinate the chicken – In a bowl, combine olive oil, minced garlic, salt, pepper, Italian seasoning, and paprika. Add the chicken pieces and toss to coat evenly. Let marinate for 15–30 minutes.
- Assemble the skewers – Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.
- Grill or bake –
- Grill: Preheat the grill to medium-high heat and cook the skewers for 8–10 minutes, turning occasionally, until the chicken is fully cooked and has a nice char.
- Oven: Preheat the oven to 400°F (200°C) and place the skewers on a lined baking sheet. Bake for 15–18 minutes, turning once halfway through.
- Add Parmesan – Once the skewers are cooked, immediately sprinkle the grated Parmesan over the hot chicken so it melts slightly.
- Garnish and serve – Sprinkle with fresh parsley and serve with lemon wedges and garlic butter on the side.
