Ingredients
1 1/2 lbs baby potatoes, halved
3 tablespoons olive oil
4 cloves garlic, minced
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/4 teaspoon paprika
Salt and black pepper, to taste
1/4 cup grated Parmesan cheese
Fresh parsley, chopped, for garnish
Instructions

Preheat oven to 400°F (200°C).

In a large bowl, toss potatoes with olive oil, garlic, thyme, rosemary, paprika, salt, and pepper.

Spread potatoes in a single layer on a baking sheet. Roast for 25–30 minutes, or until potatoes are golden and crispy on the edges.

Remove from the oven and sprinkle with Parmesan cheese.

Return to the oven for an additional 3–5 minutes, or until cheese is melted and golden.

Garnish with fresh parsley and serve warm.
