Ingredients
2 boneless, skinless chicken breasts
2 ripe peaches, halved and pitted
1 tablespoon olive oil
Salt and black pepper, to taste
4 cups mixed greens or arugula
1/4 cup crumbled goat cheese or feta
1/4 cup toasted pecans or walnuts
2 tablespoons balsamic glaze
Instructions

Preheat grill or grill pan to medium-high heat.

Brush chicken and peach halves with olive oil and season with salt and pepper.

Grill chicken for 5–6 minutes per side, or until cooked through. Grill peaches cut-side down for 2–3 minutes until charred and softened.

Let chicken rest for 5 minutes, then slice. Slice peaches if desired.

Arrange mixed greens on a platter or individual plates.

Top with grilled chicken, peaches, goat cheese, and toasted nuts.

Drizzle with balsamic glaze before serving.
