Ingredients
2 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper
1 teaspoon Italian seasoning
1 large romaine lettuce head, chopped
½ cup grated Parmesan cheese
1 cup croutons
Caesar Dressing
½ cup mayonnaise
2 tablespoons lemon juice
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
2 cloves garlic, minced
¼ teaspoon salt
¼ teaspoon black pepper
¼ cup grated Parmesan cheese
Instructions
Preheat the grill to medium-high heat. Brush chicken breasts with olive oil and season with garlic powder, salt, black pepper, and Italian seasoning.
Grill chicken for 5-7 minutes per side until fully cooked (internal temperature of 165°F). Remove from the grill and let rest for 5 minutes before slicing.
In a small bowl, whisk together mayonnaise, lemon juice, Dijon mustard, Worcestershire sauce, minced garlic, salt, black pepper, and Parmesan cheese to make the dressing.
In a large bowl, toss chopped romaine lettuce with croutons and grated Parmesan.
Add sliced grilled chicken on top and drizzle with Caesar dressing. Toss gently to coat.
Serve immediately with extra Parmesan and croutons if desired.
