Ingredients
2 ripe peaches, halved and pitted
2 tablespoons olive oil
Salt and black pepper, to taste
4 cups arugula or mixed greens
8 oz burrata cheese, torn into pieces
1/4 cup toasted pine nuts or chopped almonds
2 tablespoons balsamic glaze or reduction
Fresh basil leaves, for garnish
Instructions

Preheat grill or grill pan to medium-high heat.

Brush peach halves with olive oil and season with a pinch of salt and pepper.

Grill peaches for 2–3 minutes per side, until grill marks appear and peaches are slightly softened.

Arrange arugula or mixed greens on a platter.

Place grilled peaches on top, then add torn pieces of burrata cheese.

Sprinkle with toasted pine nuts or chopped almonds and drizzle with balsamic glaze.

Garnish with fresh basil leaves and serve immediately.
