Grilled Peach and Goat Cheese Salad – A Fresh & Delicious Summer Recipe

  • 3 ripe peaches, halved and pitted

  • 1 tablespoon olive oil

  • 6 cups mixed greens (arugula, spinach, or spring mix)

  • ½ cup crumbled goat cheese

  • ¼ cup chopped pecans or walnuts (toasted for extra crunch)

  • ¼ cup dried cranberries or pomegranate seeds

  • ½ small red onion, thinly sliced

For the Dressing:

  • 3 tablespoons olive oil

  • 1 tablespoon balsamic vinegar

  • 1 teaspoon honey

  • 1 teaspoon Dijon mustard

  • Salt and pepper to taste


Instructions

  • Grill the Peaches:

    • Preheat a grill or grill pan over medium heat.

    • Brush peach halves with olive oil and place them cut-side down on the grill.

    • Grill for 2–3 minutes per side until slightly charred and caramelized.

    • Remove from the grill and slice into wedges.

  • Prepare the Dressing:

    • In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until well combined.

  • Assemble the Salad:

    • In a large bowl, toss the mixed greens with half of the dressing.

    • Top with grilled peach slices, crumbled goat cheese, toasted nuts, dried cranberries, and red onion.

    • Drizzle the remaining dressing over the top.

 

  • Serve & Enjoy:

    • Serve immediately and enjoy a fresh, tangy, and slightly sweet salad!
