Ingredients

– 3 ripe peaches, halved and pitted

– 8 oz fresh mozzarella, sliced

– 1 cup cherry tomatoes, halved

– Fresh basil leaves

– 2 tablespoons balsamic glaze

– 2 tablespoons extra virgin olive oil

– Salt and freshly ground black pepper, to taste
Instructions

Preheat Grill:
Heat grill to medium-high. -
Grill Peaches:
Brush peach halves with olive oil. Place peaches cut side down on the grill. Grill for 3–4 minutes or until grill marks appear and peaches soften slightly. Remove and let cool. -
Assemble Salad:
Arrange grilled peach halves, mozzarella slices, and cherry tomatoes on a serving platter. -
Add Basil & Season:
Scatter fresh basil leaves over the salad. Drizzle with balsamic glaze and a little extra olive oil. Season with salt and freshly ground pepper.

Serve immediately as a refreshing summer appetizer or side dish.
