Ingredients
2 boneless, skinless chicken breasts
4 pineapple rings (fresh or canned)
1 tablespoon olive oil
1/2 teaspoon garlic powder
Salt and pepper to taste
6 cups mixed greens
1/2 cup cherry tomatoes, halved
1/4 red onion, thinly sliced
1/4 cup feta or goat cheese (optional)
1/4 cup chopped fresh cilantro
Balsamic glaze or your favorite vinaigrette, for drizzling
Instructions

Rub chicken breasts with olive oil, garlic powder, salt, and pepper.

Grill chicken and pineapple rings over medium-high heat for 4–6 minutes per side, until chicken is cooked through and pineapple has nice grill marks.

Slice grilled chicken and pineapple.

In a large bowl, combine mixed greens, tomatoes, red onion, cheese (if using), and cilantro.

Top with sliced chicken and pineapple, then drizzle with balsamic glaze or vinaigrette before serving.
