Ingredients
4 large portobello mushroom caps, stems removed
1/4 cup balsamic vinegar
2 tablespoons olive oil
1 tablespoon soy sauce
2 cloves garlic, minced
Salt and pepper to taste
4 burger buns
Optional toppings: lettuce, tomato slices, red onion, avocado, cheese, mayo or aioli
Instructions

In a bowl, whisk together balsamic vinegar, olive oil, soy sauce, garlic, salt, and pepper.

Place mushroom caps in a shallow dish and pour marinade over them. Let sit for 15–30 minutes, flipping halfway.

Preheat grill or grill pan to medium-high heat.

Grill mushrooms for 4–5 minutes per side, until tender and juicy.

Toast buns if desired, then assemble burgers with your favorite toppings.
