Ingredients
For the Salmon Burgers:
450g (1 lb) fresh salmon, skin removed and finely chopped
¼ cup breadcrumbs (panko or regular)
1 egg, lightly beaten
1 tablespoon Dijon mustard
1 tablespoon mayonnaise
1 teaspoon garlic powder
½ teaspoon smoked paprika
½ teaspoon salt
¼ teaspoon black pepper
1 tablespoon fresh lemon juice
2 tablespoons fresh parsley or cilantro, chopped
For the Avocado Salsa:
1 ripe avocado, diced
½ small red onion, finely chopped
1 small tomato, diced
1 tablespoon lime juice
1 tablespoon fresh cilantro, chopped
½ teaspoon salt
¼ teaspoon black pepper
For Serving:
4 burger buns, toasted
Lettuce leaves
Sliced red onion
Sliced tomato
Instructions
Prepare the Salmon Burgers
In a large bowl, combine finely chopped salmon, breadcrumbs, egg, Dijon mustard, mayonnaise, garlic powder, smoked paprika, salt, black pepper, lemon juice, and fresh parsley.
Mix until well combined, then shape into 4 equal-sized patties.
Refrigerate the patties for at least 20 minutes to help them hold their shape.
Grill the Salmon Burgers
Preheat a grill or stovetop grill pan to medium-high heat. Lightly oil the grates.
Grill the salmon patties for about 3–4 minutes per side until golden brown and cooked through.
Prepare the Avocado Salsa
In a small bowl, combine diced avocado, red onion, tomato, lime juice, cilantro, salt, and black pepper. Gently mix.
Assemble the Burgers
Place lettuce on the bottom half of each toasted burger bun.
Add the grilled salmon patty and top with avocado salsa.
Add sliced red onion and tomato if desired. Cover with the top bun and serve immediately.
