Ingredients

4 salmon fillets
1 tablespoon olive oil
Salt and black pepper, to taste
1/2 teaspoon paprika (optional)
Juice of 1 lime
For the mango salsa:
1 ripe mango, diced
1/2 red bell pepper, diced
1/4 red onion, finely chopped
1 small jalapeño, seeded and minced
2 tablespoons fresh cilantro, chopped
Juice of 1 lime
Salt, to taste
Instructions

Preheat grill or grill pan to medium-high heat.

Brush salmon with olive oil and season with salt, pepper, paprika, and lime juice.

Grill salmon for 4–5 minutes per side, or until cooked through and flaky.

Meanwhile, mix all salsa ingredients in a bowl and let sit for 10 minutes.

Serve grilled salmon topped with fresh mango salsa.
