Grilled Veggie Tacos Recipe: A Flavorful Plant-Based Delight

Ingredients

1 zucchini, sliced
1 yellow squash, sliced
1 red bell pepper, sliced
1 red onion, sliced
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
Salt and black pepper, to taste
8 small corn or flour tortillas

Optional toppings:
Crumbled queso fresco or feta
Fresh cilantro
Avocado slices
Lime wedges
Sour cream or chipotle mayo


Instructions

  • Preheat grill or grill pan over medium-high heat.

  • In a bowl, toss zucchini, squash, bell pepper, and onion with olive oil, chili powder, cumin, salt, and pepper.

  • Grill vegetables for 3–5 minutes per side, until tender and charred.

  • Warm tortillas on the grill for 30 seconds per side.

  • Fill tortillas with grilled veggies and add desired toppings.

 

  • Serve immediately with lime wedges on the side.
