Ingredients
1 zucchini, sliced
1 yellow squash, sliced
1 red bell pepper, sliced
1 red onion, sliced
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
Salt and black pepper, to taste
8 small corn or flour tortillas
Optional toppings:
Crumbled queso fresco or feta
Fresh cilantro
Avocado slices
Lime wedges
Sour cream or chipotle mayo
Instructions

Preheat grill or grill pan over medium-high heat.

In a bowl, toss zucchini, squash, bell pepper, and onion with olive oil, chili powder, cumin, salt, and pepper.

Grill vegetables for 3–5 minutes per side, until tender and charred.

Warm tortillas on the grill for 30 seconds per side.

Fill tortillas with grilled veggies and add desired toppings.

Serve immediately with lime wedges on the side.
