Ingredients
1 cup rolled oats
1 cup whole wheat flour
1/2 cup honey or maple syrup
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1 cup shredded carrots
1/2 cup unsweetened applesauce
1/2 cup milk (almond or regular)
1 egg
1 tsp vanilla extract
2 tbsp coconut oil or melted butter
1/4 cup chopped walnuts or raisins (optional)
Instructions
1️⃣ Preheat oven to 350°F. Line a muffin tin with liners or grease lightly.
2️⃣ In a large bowl, mix oats, whole wheat flour, baking powder, baking soda, cinnamon, and salt.
3️⃣ In another bowl, whisk together honey (or maple syrup), applesauce, milk, egg, vanilla, and melted coconut oil.
4️⃣ Add wet ingredients to the dry ingredients and stir until just combined.
5️⃣ Fold in shredded carrots and walnuts/raisins if using.
6️⃣ Divide the batter evenly into muffin cups, filling about 3/4 full.
7️⃣ Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
