– 1 teaspoon vanilla extract

– 1 cup fresh peaches, peeled and diced

– 1/2 cup powdered sugar

– 2 tablespoons heavy cream
Instructions

Preheat Oven:
Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper. -
Make Crust:
In a bowl, mix flour, granulated sugar, and salt. Cut in softened butter until mixture resembles coarse crumbs. Press half the mixture evenly into the bottom of the prepared pan. -
Prepare Filling:
In another bowl, beat eggs and vanilla extract until combined. Gently fold in diced peaches. -
Assemble Bars:
Pour peach mixture over the crust layer. Crumble the remaining crust mixture evenly on top. -
Bake:
Bake for 35–40 minutes or until golden brown and set in the center. -
Prepare Glaze:
In a small bowl, whisk powdered sugar and heavy cream until smooth. -
Glaze & Cool:
Drizzle glaze over warm bars. Let bars cool completely before slicing.
