Ingredients

  • – 1 cup all-purpose flour

  • – 1/2 cup granulated sugar

  • – 1/4 teaspoon salt

  • – 1/2 cup unsalted butter, softened

  • – 2 large eggs

  • – 1 teaspoon vanilla extract

  • – 1 cup fresh peaches, peeled and diced

  • – 1/2 cup powdered sugar

  • – 2 tablespoons heavy cream


Instructions

  1. Preheat Oven:
    Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.

  2. Make Crust:
    In a bowl, mix flour, granulated sugar, and salt. Cut in softened butter until mixture resembles coarse crumbs. Press half the mixture evenly into the bottom of the prepared pan.

  3. Prepare Filling:
    In another bowl, beat eggs and vanilla extract until combined. Gently fold in diced peaches.

  4. Assemble Bars:
    Pour peach mixture over the crust layer. Crumble the remaining crust mixture evenly on top.

  5. Bake:
    Bake for 35–40 minutes or until golden brown and set in the center.

  6. Prepare Glaze:
    In a small bowl, whisk powdered sugar and heavy cream until smooth.

  7. Glaze & Cool:
    Drizzle glaze over warm bars. Let bars cool completely before slicing.
