Ingredients
For the Chicken Scampi:

4 boneless, skinless chicken breasts (sliced into strips or cutlets)

3 tbsp olive oil

4 cloves garlic (minced)

1 cup chicken broth

1 tbsp lemon juice

1 tsp red pepper flakes (optional)

Salt and pepper to taste

2 tbsp unsalted butter

2 tbsp fresh parsley (chopped)

1 tbsp grated parmesan cheese
For the Garlic Parmesan Rice:

1 cup long-grain white rice
-
2 cups chicken broth
-
2 tbsp butter
-
2 cloves garlic (minced)

¼ cup grated parmesan cheese

Salt and pepper to taste
Instructions

Cook the Rice:

In a medium saucepan, melt butter over medium heat and sauté the minced garlic until fragrant (about 1 minute).

Add rice and stir to coat in the garlic butter.

Pour in chicken broth and bring to a boil.

Lower heat to a simmer, cover, and cook for 15-18 minutes, until the rice is tender and the liquid is absorbed.

Once cooked, stir in parmesan cheese, season with salt and pepper, and set aside.

Prepare the Chicken Scampi:

Season chicken strips with salt and pepper.

Heat olive oil in a large skillet over medium-high heat.

Add chicken and cook for 4-5 minutes per side, or until golden brown and cooked through.

Remove chicken from the skillet and set aside.

In the same skillet, melt butter and sauté garlic until fragrant.

Add chicken broth, lemon juice, and red pepper flakes (if using). Stir and bring to a simmer for 2-3 minutes.

Return chicken to the skillet and cook for an additional 2-3 minutes, letting the flavors meld.

Garnish with fresh parsley and sprinkle with grated parmesan.
