How to Make Delicious Chicken Scampi with Garlic Parmesan Rice – A Comfort Food Delight

For the Chicken Scampi:

  • 4 boneless, skinless chicken breasts (sliced into strips or cutlets)

  • 3 tbsp olive oil

  • 4 cloves garlic (minced)

  • 1 cup chicken broth

  • 1 tbsp lemon juice

  • 1 tsp red pepper flakes (optional)

  • Salt and pepper to taste

  • 2 tbsp unsalted butter

  • 2 tbsp fresh parsley (chopped)

  • 1 tbsp grated parmesan cheese

For the Garlic Parmesan Rice:

  • 1 cup long-grain white rice

  • 2 cups chicken broth

  • 2 tbsp butter

  • 2 cloves garlic (minced)

  • ¼ cup grated parmesan cheese

  • Salt and pepper to taste


Instructions

  • Cook the Rice:

    • In a medium saucepan, melt butter over medium heat and sauté the minced garlic until fragrant (about 1 minute).

    • Add rice and stir to coat in the garlic butter.

    • Pour in chicken broth and bring to a boil.

    • Lower heat to a simmer, cover, and cook for 15-18 minutes, until the rice is tender and the liquid is absorbed.

    • Once cooked, stir in parmesan cheese, season with salt and pepper, and set aside.

  • Prepare the Chicken Scampi:

    • Season chicken strips with salt and pepper.

    • Heat olive oil in a large skillet over medium-high heat.

    • Add chicken and cook for 4-5 minutes per side, or until golden brown and cooked through.

    • Remove chicken from the skillet and set aside.

    • In the same skillet, melt butter and sauté garlic until fragrant.

    • Add chicken broth, lemon juice, and red pepper flakes (if using). Stir and bring to a simmer for 2-3 minutes.

    • Return chicken to the skillet and cook for an additional 2-3 minutes, letting the flavors meld.

    • Garnish with fresh parsley and sprinkle with grated parmesan.

 

  • Serve:

    • Serve the chicken scampi over the garlic parmesan rice.

    • Garnish with extra parsley and parmesan if desired.
