Lentil Veggie Burgers Recipe: A Healthy, Delicious Plant-Based Option

1 cup dry brown or green lentils, rinsed
2 1/4 cups water or vegetable broth
1 tablespoon olive oil
1 small onion, finely diced
2 cloves garlic, minced
1 small carrot, grated
1/2 cup breadcrumbs (use gluten-free if needed)
1/4 cup rolled oats
1 tablespoon soy sauce or tamari
1 tablespoon tomato paste
1 teaspoon smoked paprika
1/2 teaspoon cumin
Salt and black pepper, to taste
Oil, for cooking


Instructions

  1. Cook the Lentils: In a medium saucepan, combine lentils and water or broth. Bring to a boil, reduce heat, and simmer for 20–25 minutes, or until lentils are tender and liquid is absorbed. Drain any excess liquid and let cool slightly.

  2. Sauté the Veggies: In a skillet, heat olive oil over medium heat. Add onion, garlic, and grated carrot. Sauté for 5–7 minutes until softened. Remove from heat.

  3. Make the Burger Mix: In a large bowl, mash the cooked lentils with a fork or potato masher, leaving some texture. Add sautéed veggies, breadcrumbs, oats, soy sauce, tomato paste, and spices. Mix until well combined. Taste and adjust seasoning.

  4. Form Patties: With damp hands, shape the mixture into 4–6 burger patties. If the mixture is too wet, add a bit more breadcrumbs.

  5. Cook the Burgers: Heat a little oil in a skillet over medium heat. Cook patties for 4–5 minutes on each side, or until golden brown and heated through.

  6. Serve: Serve on buns with your favorite toppings—lettuce, tomato, pickles, avocado, or a creamy sauce.
