2 cups shredded cheddar cheese (or a mix of cheddar & Monterey Jack)

½ cup black beans, drained and rinsed

½ cup corn (fresh, canned, or frozen)

¼ cup red onion, finely diced

1 jalapeño, sliced (optional)

¼ cup chopped tomatoes

¼ cup sour cream (for drizzling)

2 tbsp fresh cilantro, chopped

1 lime, cut into wedges
Instructions

Preheat the Oven:

Preheat oven to 375°F (190°C).

Line a large baking sheet with parchment paper.

Prepare the Chicken:

In a bowl, mix shredded chicken with BBQ sauce until fully coated.

Assemble the Nachos:

Spread tortilla chips evenly on the baking sheet.

Layer with half the cheese, BBQ chicken, black beans, corn, red onion, and jalapeños.

Add the remaining cheese on top.

Bake Until Melty:

Bake for 10-12 minutes, or until the cheese is fully melted and bubbly.

Add Fresh Toppings:

Remove from the oven and top with chopped tomatoes, sour cream drizzle, and fresh cilantro.
