  • 1 large bag tortilla chips

  • 2 cups cooked shredded chicken

  • ½ cup BBQ sauce

  • 2 cups shredded cheddar cheese (or a mix of cheddar & Monterey Jack)

  • ½ cup black beans, drained and rinsed

  • ½ cup corn (fresh, canned, or frozen)

  • ¼ cup red onion, finely diced

  • 1 jalapeño, sliced (optional)

  • ¼ cup chopped tomatoes

  • ¼ cup sour cream (for drizzling)

  • 2 tbsp fresh cilantro, chopped

  • 1 lime, cut into wedges


Instructions

  • Preheat the Oven:

    • Preheat oven to 375°F (190°C).

    • Line a large baking sheet with parchment paper.

  • Prepare the Chicken:

    • In a bowl, mix shredded chicken with BBQ sauce until fully coated.

  • Assemble the Nachos:

    • Spread tortilla chips evenly on the baking sheet.

    • Layer with half the cheese, BBQ chicken, black beans, corn, red onion, and jalapeños.

    • Add the remaining cheese on top.

  • Bake Until Melty:

    • Bake for 10-12 minutes, or until the cheese is fully melted and bubbly.

 

  • Add Fresh Toppings:

    • Remove from the oven and top with chopped tomatoes, sour cream drizzle, and fresh cilantro.

    • Serve with lime wedges on the side.
