Loaded Cheesy Potato Casserole Recipe – A Delicious Comfort Food

  • 6 cups diced potatoes (peeled or unpeeled, parboiled or use frozen hash browns)

  • 2 cups shredded cheddar cheese

  • 1/2 cup sour cream

  • 1/2 cup mayonnaise

  • 1/4 cup milk

  • 6 slices bacon (cooked and crumbled)

  • 1/4 cup chopped green onions

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • Salt and black pepper to taste

  • Optional: extra cheese and bacon for topping


Instructions

  • Preheat Oven:
    Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.

  • Prepare the Mixture:
    In a large bowl, mix together sour cream, mayonnaise, milk, garlic powder, onion powder, salt, and pepper. Stir in cheese, bacon (reserve some for topping), and green onions.

  • Combine with Potatoes:
    Add the diced potatoes to the mixture and stir until fully coated.

  • Assemble the Casserole:
    Pour the mixture into the prepared baking dish. Top with extra cheese and bacon if desired.

  • Bake:
    Bake uncovered for 30–35 minutes, or until hot and bubbly with a golden top.

 

  • Serve:
    Garnish with additional green onions before serving.
