6 cups diced potatoes (peeled or unpeeled, parboiled or use frozen hash browns)

2 cups shredded cheddar cheese

1/2 cup sour cream

1/2 cup mayonnaise

1/4 cup milk

6 slices bacon (cooked and crumbled)

1/4 cup chopped green onions

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and black pepper to taste

Optional: extra cheese and bacon for topping
Instructions

Preheat Oven:
Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish. -
Prepare the Mixture:
In a large bowl, mix together sour cream, mayonnaise, milk, garlic powder, onion powder, salt, and pepper. Stir in cheese, bacon (reserve some for topping), and green onions. -
Combine with Potatoes:
Add the diced potatoes to the mixture and stir until fully coated. -
Assemble the Casserole:
Pour the mixture into the prepared baking dish. Top with extra cheese and bacon if desired. -
Bake:
Bake uncovered for 30–35 minutes, or until hot and bubbly with a golden top.
