Ingredients

1 lb ground beef or ground turkey

1 packet taco seasoning mix

1 cup frozen corn kernels

1 cup black beans, drained and rinsed

1 cup diced bell peppers (red, green, or both)

1 small onion, chopped

1 ½ cups shredded cheddar cheese

1 ½ cups shredded Mexican blend cheese

1 bag (32 oz) frozen tater tots

½ cup sour cream
-
¼ cup salsa
-
¼ cup chopped fresh cilantro (optional for garnish)

Jalapeño slices (optional, for garnish)

Salt and pepper to taste
Instructions

Preheat Oven & Cook Ground Meat:

Preheat oven to 375°F (190°C).

In a large skillet, cook the ground beef (or turkey) over medium heat until browned and cooked through, breaking it apart as it cooks.

Drain any excess fat, then stir in the taco seasoning and a splash of water according to packet instructions. Set aside.

Prepare Vegetables:

In the same skillet, add the chopped onion and bell peppers. Cook for about 3-4 minutes until softened. Add the corn and black beans, then season with salt and pepper to taste. Stir everything together and set aside.

Assemble the Casserole:

In a greased 9×13-inch baking dish, spread the cooked ground meat mixture evenly across the bottom.

Layer the vegetable mixture on top of the meat.

Sprinkle a generous amount of shredded cheddar cheese and Mexican blend cheese over the top of the veggies.

Add the Tater Tots:

Arrange the frozen tater tots in an even layer on top of the casserole.

Bake the Casserole:

Bake for 25-30 minutes, or until the tater tots are golden and crispy and the cheese is melted and bubbly.

Serve & Garnish:

Once out of the oven, drizzle sour cream and salsa over the casserole.

Garnish with fresh cilantro and jalapeño slices for extra flavor.
