Loaded Tex-Mex Tater Tot Casserole: A Hearty and Flavorful Family Favorite

  • 1 lb ground beef or ground turkey

  • 1 packet taco seasoning mix

  • 1 cup frozen corn kernels

  • 1 cup black beans, drained and rinsed

  • 1 cup diced bell peppers (red, green, or both)

  • 1 small onion, chopped

  • 1 ½ cups shredded cheddar cheese

  • 1 ½ cups shredded Mexican blend cheese

  • 1 bag (32 oz) frozen tater tots

  • ½ cup sour cream

  • ¼ cup salsa

  • ¼ cup chopped fresh cilantro (optional for garnish)

  • Jalapeño slices (optional, for garnish)

  • Salt and pepper to taste


Instructions

  • Preheat Oven & Cook Ground Meat:

    • Preheat oven to 375°F (190°C).

    • In a large skillet, cook the ground beef (or turkey) over medium heat until browned and cooked through, breaking it apart as it cooks.

    • Drain any excess fat, then stir in the taco seasoning and a splash of water according to packet instructions. Set aside.

  • Prepare Vegetables:

    • In the same skillet, add the chopped onion and bell peppers. Cook for about 3-4 minutes until softened. Add the corn and black beans, then season with salt and pepper to taste. Stir everything together and set aside.

  • Assemble the Casserole:

    • In a greased 9×13-inch baking dish, spread the cooked ground meat mixture evenly across the bottom.

    • Layer the vegetable mixture on top of the meat.

    • Sprinkle a generous amount of shredded cheddar cheese and Mexican blend cheese over the top of the veggies.

  • Add the Tater Tots:

    • Arrange the frozen tater tots in an even layer on top of the casserole.

  • Bake the Casserole:

    • Bake for 25-30 minutes, or until the tater tots are golden and crispy and the cheese is melted and bubbly.

 

  • Serve & Garnish:

    • Once out of the oven, drizzle sour cream and salsa over the casserole.

    • Garnish with fresh cilantro and jalapeño slices for extra flavor.
