Ingredients
For the Beef Stir-Fry:
500 g (1 lb) beef sirloin, cut into thin strips
2 tablespoons vegetable oil
1 red onion, sliced into wedges
2 tomatoes, sliced into wedges
1 yellow bell pepper, sliced (optional)
2 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon red wine vinegar
1 tablespoon oyster sauce
½ teaspoon ground cumin
¼ teaspoon black pepper
¼ teaspoon salt
½ teaspoon aji amarillo paste (Peruvian yellow chili paste, optional)
Fresh cilantro, chopped (for garnish)
For Serving:
2 cups cooked white rice
2 cups French fries (homemade or frozen, cooked)
Instructions
Sear the Beef:
Heat 1 tablespoon of oil in a large pan or wok over high heat. Add beef strips and sear for about 2 minutes until browned. Remove and set aside.
Sauté the Vegetables:
In the same pan, add another tablespoon of oil. Sauté onions and bell pepper for 1–2 minutes until slightly softened. Add garlic and cook for 30 seconds.
Combine and Simmer:
Return the beef to the pan. Add tomatoes, soy sauce, red wine vinegar, oyster sauce, cumin, black pepper, salt, and aji amarillo paste if using. Stir-fry for 2 more minutes until everything is well combined and tomatoes soften slightly.
Serve:
Garnish with chopped cilantro. Serve hot with white rice and crispy French fries.
