2 cups cooked chicken breast, shredded or chopped
1 ripe mango, peeled and diced
1/2 red bell pepper, diced
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
2 tablespoons lime juice
1 tablespoon olive oil
Salt and black pepper, to taste
Optional: mixed greens or lettuce for serving
Instructions

In a large bowl, combine chicken, mango, bell pepper, red onion, and cilantro.

In a small bowl, whisk together lime juice, olive oil, salt, and pepper.

Pour dressing over the salad and toss to coat evenly.

Serve on its own or over a bed of greens.
