Mango Cookie Recipe: A Tropical Twist on Classic Cookies

For the Cookies:

1 ½ cups all-purpose flour

½ teaspoon baking powder

¼ teaspoon salt

½ cup unsalted butter, softened

¾ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

½ cup mango purée (fresh or canned)

½ teaspoon lemon zest (optional)

For the Mango Glaze:

½ cup powdered sugar

2 tablespoons mango purée

½ teaspoon lemon juice


Instructions

Prepare the Dough

Preheat oven to 175°C (350°F). Line a baking sheet with parchment paper.

In a bowl, whisk together flour, baking powder, and salt.

In another bowl, beat butter and sugar until light and fluffy.

Mix in the egg, vanilla extract, mango purée, and lemon zest until smooth.

Gradually add dry ingredients to the wet mixture, stirring until just combined.

 

Bake the Cookies

Scoop tablespoon-sized portions of dough onto the prepared baking sheet.

Flatten slightly and bake for 10–12 minutes, or until edges turn lightly golden.

Let cookies cool on the pan for 5 minutes before transferring to a wire rack.

 

Prepare the Glaze

Whisk powdered sugar, mango purée, and lemon juice until smooth.

Drizzle over cooled cookies and let set for 10 minutes.
