Instructions

Preheat Oven:

Set the oven to 400°F (200°C).

Line a baking sheet with parchment paper.

Prepare the Sweet Potatoes:

In a large bowl, toss the sweet potato slices with olive oil, maple syrup, cinnamon, salt, and pepper.

Arrange & Bake:

Spread the sweet potato slices in a single layer on the baking sheet.

Roast for 20 minutes, flipping halfway through.

Toast the Pecans:

In a small pan, melt butter over low heat.

Stir in chopped pecans and vanilla extract.
