Maple Pecan Roasted Sweet Potato Slices Recipe – Delicious & Healthy Side Dish

  • 2 large sweet potatoes, sliced into ¼-inch rounds

  • 2 tablespoons olive oil

  • 3 tablespoons maple syrup

  • 1 teaspoon cinnamon

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ½ cup pecans, chopped

  • 1 tablespoon butter, melted

  • ½ teaspoon vanilla extract (optional)


Instructions

  • Preheat Oven:

    • Set the oven to 400°F (200°C).

    • Line a baking sheet with parchment paper.

  • Prepare the Sweet Potatoes:

    • In a large bowl, toss the sweet potato slices with olive oil, maple syrup, cinnamon, salt, and pepper.

  • Arrange & Bake:

    • Spread the sweet potato slices in a single layer on the baking sheet.

    • Roast for 20 minutes, flipping halfway through.

  • Toast the Pecans:

    • In a small pan, melt butter over low heat.

    • Stir in chopped pecans and vanilla extract.

    • Toast for 2-3 minutes, stirring frequently.

 

  • Combine & Serve:

    • Sprinkle the toasted pecans over the roasted sweet potatoes.

    • Drizzle with extra maple syrup if desired.

    • Serve warm and enjoy!
