  • 4 white fish fillets (cod, tilapia, halibut, or sea bass)
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp paprika
  • ½ tsp red pepper flakes (optional)
  • 1 cup cherry tomatoes, halved
  • ½ cup Kalamata olives, sliced
  • ¼ cup red onion, thinly sliced
  • 2 tbsp capers (optional)
  • Juice of 1 lemon
  • ¼ cup fresh parsley, chopped

 

  • Lemon wedges (for serving)

Instructions

  1. Preheat the Oven:

    • Preheat oven to 400°F (200°C).
    • Lightly grease a baking dish with olive oil.
  2. Prepare the Fish:

    • Place the fish fillets in the baking dish.
    • Drizzle with olive oil and rub garlic, salt, black pepper, oregano, paprika, and red pepper flakes onto the fish.
  3. Add Mediterranean Toppings:

    • Scatter cherry tomatoes, olives, red onion, and capers around the fish.
    • Squeeze fresh lemon juice over the top.
  4. Bake the Fish:

    • Bake for 15-20 minutes, or until the fish is opaque and flakes easily with a fork.
  5. Garnish & Serve:

    • Sprinkle with fresh parsley and serve with lemon wedges.
